Veg Hakka Noodles


Veg Hakka noodles have been my favorite recipe since my childhood. It is an Indo-Chinese recipe. This most popular dish in Chinese cuisine is quick and easy to make and perfect for dinner. Made with mixed vegetables, it is very crunchy. You can make use of any vegetables of your choice. Noodles are always a favorite dish of children. As well as adults. It's healthier if you use wheat noodles. You can make noodles with scrambled eggs and chicken .this Hakka noodles originated from Chinese immigrants(Northern China) living in Kolkata(India). It is available in street stalls as well as restaurants. If you have mixed veggies and noodles, try this tasty recipe. It is great, along with chili paneer and Gobi Manchurian.

 

Ingredients:

  1. Noodles - 1 packet
  2. Vegetables (you can use any vegetables of your choice. here, I have taken onion, cabbage, capsicum, and carrot).
  3. Chopped Garlic - 1 tbsp
  4. Chopped green chili - 1 tbsp
  5. Soy sauce - 2-3 tbsp
  6. Vinegar -1/2 tsp
  7. Salt and pepper to taste
  8. Oil
  9. Water

 

Preparation:

Step 1. 

  • Cut the vegetables finely (long shape), 
  • Then keep aside

Step 2. 

  • Heat water in a deep well, 
  • Then add 1tsp oil( do not add coconut oil). 
  • When it starts to boil, 
  • Then add salt. 
  • Add noodles 
  • And cook as per instruction on the noodles.
  • Don't overcook.

Step 3. 

  • Drain the noodles, 
  • And pour cold water over them. 
  • Then coat with oil to avoid sticking each other.

Step 4. 

  • Heat oil in a pan, 
  • Add chopped Garlic and chopped green chilies, 
  • And saute for a minute.

Step 5.

  • Then add onion,
  • And other veggies.
  • Saute for 2-3 minutes .
  • Don't overcook 
  • Veggies should remain crunchy.
  • Saute veggies on high flame .
  • Saute continuously to avoid burning. 
  • Then add salt to taste.

Step 6. 

  • Then add cooked noodles to it.
  • Add soy sauce,vinegar, 
  • And pepper powder for your taste. 
  • Toss and combine well with veggies, pepper, and ginger.

Serve with hot. Tasty Hakka noodles ready.
