Creamy Russian Salad Recipe

Ingredients

For the Chicken


  • 250 g boneless chicken breast
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

  • 2 cups water

For the Salad

  • 1 cup potatoes, diced
  • ½ cup carrot, diced
  • ½ cup apple, diced
  • ½ cup pineapple chunks
  • ½ cup seedless grapes, halved
  • 2 boiled eggs, chopped
  • ¼ cup roasted cashews

For the Dressing

  • ¾ cup mayonnaise
  • ¼ cup fresh cream
  • 3 tablespoon powdered sugar
  • ½ teaspoon black pepper
  • Salt to adjust taste

Instructions


Step 1: Cook the Chicken


Place the chicken breast in a saucepan with water, salt, and black pepper. Bring to a boil, then reduce the heat and simmer for 15–20 minutes or until the chicken is fully cooked. Remove, let it cool, and cut or shred it into bite-sized pieces.


Step 2: Boil the Eggs

Place 2 eggs in a saucepan and cover them with water. Bring to a boil, then cook for 10–12 minutes. Transfer the eggs to cold water, peel them, and chop into small pieces.




Step 3:Prepare the Vegetables


Boil the potatoes, carrots, and until just tender. Drain well and allow them to cool completely.

Step 4: Prepare the Fruits

Wash and dice the apple just before mixing to keep it fresh. Cut the pineapple into small pieces and halve the grapes if using.

Step 5: Make the Dressing

In a large bowl, combine the mayonnaise, fresh cream, sugar, salt, black pepper, and lemon juice. Mix until smooth and creamy.

Step 6: Assemble the Salad

Add the cooked chicken, cooled vegetables, apples, pineapple, and grapes to the dressing. Gently fold everything together until all the ingredients are evenly coated.. Garnish with a few chopped nuts, slices of boiled egg

Step 7: Chill and Serve

Cover the bowl and refrigerate the salad for at least 30 minutes. Serve chilled as a starter, side dish, or light meal.
