Kerala Egg Roast Recipe

Today i am sharing with you a spicy delicious flavorful recipe ,Kerala egg roast.Egg roast prepared with boiled eggs and roasted onion with spices.This is one of the easiest and quick side dish with South Indian breakfast.The base of the recipe is onion - tomato gravy.You can make this recipe either by adding  and without adding tomato.I am showing you the recipe with tomato.Coconut oil is used to make this masala.Coconut oil gives a good flavor to this recipe.

In South India this egg roast is uasually served with idiyyappam,appam,puttu as a breakfast.Also it goes well with rice as a lunch and with chapathi as dinner.

Ingredients:

Boiled eggs                              - 3
Onion                                        -3 (medium)
Tomato                                     -1
Green chillies                           -2
Ginger finely chopped            -1 tbsp
Garlic finely chopped              -11/2 tbsp
Curry leaves                              -1 sprig
Kashmiri red chilli powder      -1 tbsp
Turmeric powder                      -1/4 tsp
Garam masala                          - 1/4 tsp
Salt to taste
Coconut Oil                                -2 tbsp
Hot water                                   -1/4 cup
Corriander leaves

How to prepare:

1. For boiling eggs

   For boiling eggs,take a pressure cooker
   and add salt. Then pour enough water to
   the cooker to cover the eggs.close the         lid and cook till one whistle.
   Peel the eggs and by using knife make
   slit around the eggs carefully.

2. For Preparing masala

*  Heat a pan,then add 2 tbsp of coconut
    oil.

* Add chopped garlic,chopped ginger,
  chopped green chillies and saute well for
  2 minutes.

* Then add chopped onion and pinch of
   salt to soft onion quickly.then add
   curryleaves.saute well til become onion
   transparent.Then add tomatoes and 
   cook well til become soft.

* Then add turmeric powder,Kashmiri red
   chilli powder,garam masala and saute til
   raw smell goes.Then add 1/4 th cup of 
   hot water.saute well.
* Finely add corriander leaves and boiled
   eggs at centre and cover with masala.
   Keep in 10 minutes at low flame.
